Here I thought I could post recipes I have found. I'm always looking for new things to try so feel free to share! :)
Weight Watchers Oatmeal-Raisin Bites: (1 POINT FOR 1 COOKIE BITE
1 1/2 cups rolled oats
3/4 cup whole-grain wheat flour
1/2 tsp baking powder
1/4 tbs salt
1/2 tsp ground Cinnamon
1 cup raisins, chopped
1/2 cup butter, softened
1/4 cup sugar
1/2 cup packed brown sugar
1 large egg
1 tsp vanilla extract
Preheat oven to 350. In medium bowl, combine oats, flour, baking powder, salt, and cinnamon; set aside. Using an electric mixer, cream butter and both sugars, until incorporated. Add oat mixture and mix until just combined; fold in raisins.
drop 1 rounded teaspoon of batter about 1 inch apart onto 2 ungreased cookie sheets. bake for 9 to 10 minutes for chewy cookies and 11 to 12 minutes for crisper ones. remove from oven and let cookies rest for about 2 minutes; remove cookies to wire rack to cool completely.
*Scott does not like raisins so we did not add them and on his bites I put 1 white chocolate chip on top. He LOVED them!!------ENJOY!!

Pan Seared Chicken with Garlic Sauce: (3 points for 1 chicken breast and 2 Tbs. garlic sauce)
1 tsp paprika
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp table salt
1/4 tsp black pepper (we did not use since I'm allergic to it) :)
4 4oz pieces of skinless chicken breasts
1 tsp olive oil
12 medium garlic cloves, halved
1 cup fat free chicken broth, reduced-sodium, divided
Preheat oven to 450
combine first 5 ingredients in a small bowl. Sprinkle both sides of chicken with herb mixture.
Heat oil in a large ovenproof nonstick skillet over medium-high heat. Add chicken, and cook 2 minutes on each side. Add garlic and 3/4 cup broth. Place pan in oven.
Bake at 450 for 10 minutes or until chicken is done and garlic cloves are soft.
Remove pan from oven. Transfer chicken to a platter; keep warm. Add remaining 1/4 cup broth to pan. Mash garlic with a fork. Cook garlic mixture over medium heat 2 minutes or until thoroughly heated; stir. Serve garlic sauce over chicken.--ENJOY!
